Pumpkin Curry

Hello there and welcome OWL wellness lovers! 

My name is Kylie Ann Love but you may know me as 'Wild Mamma"! It is with the highest joy that I get to share one of my absolute favorite healing dishes with you all and a little bit about who I am, my vision, and how OWL has been such a huge inspiration for me throughout my journey! 

I’d like to introduce our recipe for the day: Pumpkin Curry! I crafted this recipe in my jungle kitchen with nourishment, healing, and gut health in mind. The veggies in this dish are hearty yet light, calming, and soothing on the belly. The healthy fats in this recipe are anti-inflammatory, amazing for the heart and brain, and are known to moisturize hair and even plump up the skin.  The fresh zest, herbs, spices, and superfoods you'll infuse this dish with are very rich in minerals, vitamins, antioxidants, and phytonutrients! This curry is perfect for energizing and nourishing you on a deep cellular level, boosting your immune system, and fueling your body with all of the vital nutrients it requires to be running and functioning smoothly. This curry is just so yummy you’ll always want to go back for seconds! 

Before we get cookin', I'd like to share a tad bit about myself, my passions, and my journey. I am a Holistic Wellness Mamma and a California native turned full on jungle woman! I’m raising two little wild cubs in a small village called Ayampe in Ecuador where the jungle meets the sea. I left my roots back in California nearly 4 years ago to chase a wild dream all the way to South America! My mission was to become the change I wished to see in the world and to create an epic life: A life of love, passion, purpose, and legacy. 

Before I embarked on this wild ride, I was the first-ever employee of OWL Venice! I know, wild, right? Our founder, Lindsey Wilson, is a dear sister of mine. When she first launched OWL, I asked to assist her in the kitchen hustling bone broth from her breezy retro beachside apartment. I hold those times so dear to my heart as they truly shaped the woman I am today! 

Since then, we have both totally blasted off in our careers and on this amazing wellness journey together but on opposite sides of the world. It has been so amazing to witness OWL’s growth and impact over these recent years! I’m honestly blown away by the growth and success of this movement and it's so cathartic that I now get to be back here on the team creating for the blog as it was those early times with Lindsey, creating bone broth and cleanse kits, that truly inspired my healing journey. I have learned so much in the past four years and look forward to sharing my pearls of wisdom, healing recipes, and encouragement with you all! 


OWL Pumpkin Curry Recipe


And now, without further ado, let's make some Pumpkin Curry! The first step is to create a lovely and creative environment in your kitchen. I like to tidy up, have fresh flowers, play my favorite music, and light some sage and candles. I also like to gather and measure out the ingredients I'll need for the whole recipe.  I believe that it is so important to prepare your food with love and intention. One of my favorite ways of doing so is to measure out all of my ingredients first and display them like a work of art. I find this organization helps me to be present and create a dish where people can feel, taste, and see the love. Another way is to close my eyes and take a moment to fill my body with gratitude and appreciation for the food I am about to prepare. I highly encourage you to give this a try as it has changed my whole experience with food and cooking. 


Note: This dish can easily become a vegan dish. Modifications listed below. 


PRIMARY INGREDIENTS

  • 2 cups Pumpkin, cubed
  • 2 cups OWL Vegan Mineral Broth (or OWL Bone Broth)
  • 2 cups Coconut Milk
  • 1 cup Lemongrass Tea, pre-steeped
  • 2 tbsp. Ghee or Coconut Oil 
  • 1 cup Cauliflower 
  • 1 cup Green Peas 
  • 1 cup Carrots 
  • 1 large handful of Bok Choy 
  • 1 large handful of Collard Greens

SUPERFOODS 

  • 1 tbsp. Curry Powder
  • 1 tbsp. Masala Powder 
  • 3" Ginger, freshly grated
  • 3" Turmeric, freshly grated
  • Sea salt 
  • Fresh cracked pepper 
  • Stevia, Coconut sugar or honey 
  • Fresh lime & orange zest 
  • Fresh Cilantro
  • Fresh Basil
  • Optional chili flakes if you desire spice! 

AND NOW, LET'S GET COOKIN! 

  1. Cut your cauliflower into florets
  2. Julienne your carrots 
  3. Finely chop your bok choy and collard greens 
  4. Finely chop your fresh herbs (keep separate)
  5. Steam or lightly sauté all your veggies until soft to the poke (keep the pumpkin separate as you'll be using it to create your sauce later)
  6. On medium-high heat your sauté pan
  7. Add in your ghee or coconut oil 
  8. Toss in your dry ingredients 
  9. Add in your zest, salt, pepper, sweet and spice to your unique taste preference 
  10. Infuse these ingredients while releasing their aromas for a few minutes (it's important not to burn your infusion) 
  11. Add in your coconut milk, broth, and lemongrass tea and bring to a light boil

Once that's ready, it's time to get saucy and plate it up! To create your sauce, add your curry infusion, half of your fresh herbs, and steamed pumpkin into a high powered blender and blend on high until silky smooth. Give it a taste and feel free to add more of anything you may desire. Pour this over your steamed veggies and top with the rest of your fresh herbs and some freshly squeezed lime juice. Give thanks for your nourishment and enjoy it!
