Grain and Allium Free Chicken ‘Noodle’ Soup

Grain and Allium Free Chicken 'Noodle' Soup, a jar of OWL Venice Organic Chicken Bone Broth Elixir, Avocado, & Cilantro 

Makes 4 servings

Ingredients:

  • 2 tablespoons olive oil
  • 1 in ginger, grated
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 6 cups OWL Venice Chicken Bone Broth (1.5 jars)
  • 2 zucchini, spiralized
  • 2 cups cooked chicken, diced
  • Salt, to taste
  • 1 tsp thyme leaves, chopped
  • 1 tbsp chopped fresh parsley and cilantro, plus more for garnish
  • ½ lemon and 1 avocado, garnish


Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the ginger, carrots and celery along with salt and cook until softened, about 5 minutes.
  3. Next add the broth, and bring to a boil.
  4. Reduce to a simmer, add the chicken and zucchini noodles and place a lid on top. Let simmer for 5-7 minutes until the noodles are soft.
  5. Taste and adjust seasoning. Add the fresh herbs and serve with fresh lemon, avocado on top!
