Mediterranean Chicken Skewers

Mediterranean Chicken Skewers Ingredients

 

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2-4 tbsp cup olive oil
  • 1 teaspoon cumin
  • 1 teaspoons dried oregano
  • 1 tablespoon fresh mint, minced
  • 1 teaspoon himalayan salt
  • Juice of 1 lemon
  • 1 zucchini, cut into 1-inch pieces
  • 1 yellow squash, cut into 1-inch pieces
  • ½ red bell pepper, cut into 1 in cubes (optional) or 1 head radicchio, cut into 1 in pieces (for reset compliant)
  • Wooden skewers, soaked in water for 20 - 30 minutes
  • Fresh mint and lemon, for garnish

Instructions:

  1. Preheat your grill or grill pan to medium-high heat. Place skewers in a flat dish with water for 20 mins
  2. In a large bowl, add the chicken, olive oil, cumin, oregano, mint, salt, and lemon juice. Toss to coat the chicken.
  3. Thread the chicken, zucchini, yellow squash, and red bell pepper (if using) onto the wooden skewers, alternating the ingredients.
  4. Grill the skewers for 7-8 minutes per side, until the chicken is cooked through and the vegetables are tender. Garnish with fresh mint and lemon wedges. Enjoy!
