Mediterranean Chicken Skewers
Ingredients:
- 1 lb. boneless, skinless chicken breasts, cut into 1-inch pieces
- 2-4 tbsp cup olive oil
- 1 teaspoon cumin
- 1 teaspoons dried oregano
- 1 tablespoon fresh mint, minced
- 1 teaspoon himalayan salt
- Juice of 1 lemon
- 1 zucchini, cut into 1-inch pieces
- 1 yellow squash, cut into 1-inch pieces
- ½ red bell pepper, cut into 1 in cubes (optional) or 1 head radicchio, cut into 1 in pieces (for reset compliant)
- Wooden skewers, soaked in water for 20 - 30 minutes
- Fresh mint and lemon, for garnish
Instructions:
- Preheat your grill or grill pan to medium-high heat. Place skewers in a flat dish with water for 20 mins
- In a large bowl, add the chicken, olive oil, cumin, oregano, mint, salt, and lemon juice. Toss to coat the chicken.
- Thread the chicken, zucchini, yellow squash, and red bell pepper (if using) onto the wooden skewers, alternating the ingredients.
- Grill the skewers for 7-8 minutes per side, until the chicken is cooked through and the vegetables are tender. Garnish with fresh mint and lemon wedges. Enjoy!
