Hasselback Beets & Greens with Chicken + Avocado Cream

Hasselback Beets Ingredients

Main Ingredients:

  • 1/2 lb Chicken Breast, trimmed
  • 2 cups OWL Bone Broth (Chicken)
  • 1 Stalk Celery, chopped
  • 3 Large Beets with Greens
  • 1 Bunch Collard Greens
  • 1 Sprig Fresh Rosemary + Thyme
  • Olive Oil
  • Salt/Pepper

Avocado Cream:

  • 1 Avocado
  • 1 Lemon's Juice
  • 1/2 cup Reserved Broth
  • 1 cup Fresh Cilantro, leaves
  • 1 cup Fresh Parsley, leaves
  • 1 tbsp Fresh Rosemary
  • 1 tbsp Fresh Thyme
  • Salt

 

Hasselback Beets & Greens with Avocado Cream

 

Method:

  1. Salt & pepper the chicken
  2. In a medium pot - add chicken, broth, celery, rosemary + thyme sprigs.
  3. Bring to a boil, reduce, cover and simmer for 12-15 mins, or 165*f (Bone-in chicken breast will need 25-30 mins).
  4. Remove chicken + let rest for 5-10 mins.
  5. Strain + reserve broth.
  6. Shred with 2 forks, or serve as desired.
  7. Heat oven to 375* + prepare beets:
  8. Remove stems and save. Cut beets in half, cut slices 1/4" thick, crosswise across the curve. *Do not cut all the way through.*
  9. Place on a baking sheet, lined with foil + drizzle with olive oil, salt, and fresh herbs.
  10. Roast for 40-45 mins, until it can be pierced.
  11. While beets are roasting, prep + sautée the greens: Remove ribs from collard greens, lay leaves on top of each other + roll. Cut into 1/2" ribbons. Rough chop beet greens and stems.
  12. Heat a skillet over medium-low, add 2 tbsp olive oil, collard greens, beet greens/stems, season with salt + toss to coat. Cook for 4-5 mins, until just wilted.

The cream:

  1. add cilantro, parsley, rosemary + thyme to a food processor or blender + pulse until finely chopped.
  2. Add avocado, 1/2 cup reserved broth, lemon juice + 2 tsp salt, to taste. Blend until smooth.
